You are probably familiar with desert limes and finger lines, but do you know what wax flowers taste like? Did you know that most of the world’s macadamias are cultivated in Hawaii, but that the nut is actually indigenous to Australia? And that Sydney Rock Oysters are endemic to Australia? We are privileged to have access to some unique native ingredients in Australia and New Zealand, some that we’re more familiar with than others. We are privileged to work closely with a number of different people cultivating native ingredients, as well as making unique products using them such as couverture chocolate with indigenous botanicals; sun-dried kelp blended with locally sourced finger lime; native saline produce; and, wax flowers for culinary use. Whether they are Indigenous owned and operated, or others passionate about cultivating and celebrating native ingredients in all their glory, they all have one thing in common - they proudly showcase a wide variety of well-known and lesser known indigenous produce and ways that we can integrate these distinctive products into our kitchens and cooking.
