The first luxury rum to combine smoke and scarce, native Australian plants with rare, Australian fortified wine cask finishes.
Birds of Isle is a female-founded, luxury rum. Created with the same rigour and respect as traditional aged rums, but overflowing with Australian ambition and imagination.
We find ingredients with purpose that celebrate our 65,000 year history, impart the terroir of Bundjalung Country-Northern Rivers, and showcase the magic of Australia.
The thing that makes our rum so special is the use of native Australian bunya nuts. We’re the first distillery to use them in spirits. They’re not commercially grown, which means the nuts are hand-foraged from bunya pine trees and we’re limited by what nature grows every year.
To get our distinctly Northern Rivers flavour, we remove the bunya shells and flame-torch them. Then gently oven-roast the bunya nuts. Then finally co-macerate both the shells and the nuts in our rum.
For our finishing casks, we hand-select rare, Australian fortified wine casks for their distinguishable flavour and character. For our first release we chose French oak muscat casks from the Barossa.
The result is a luxurious rum with flavours of burnt sugar, anise, spice, a gentle wisp of bunya nut smoke, and roasted nuts.
