Myoga shoots, aka young Japanese ginger, are loving the warmer conditions as spring well and truly sets in at Darling Mills Farm in northern Sydney. Japanese ginger is a perennial that loves rich well drained soil and partial shade and grows a bit like asparagus.
The shoots are tender and taste mildly like ginger and somewhat like onion, so they offer a gentle yet fragrant spicy allium flavour profile which is perfect for Japanese and Korean soups or stir-fried dishes. They are also excellent for pickling.
The season is limited so now is the time to enjoy these beauties. If you are in Sydney you can find Darling Mills Farm produce at Carriageworks Farmers Markets on Saturdays, or Northside Produce Markets on the 1st & 3rd Saturday of each month.
