Operating in our chemical free environment, food provenance is the key to who we are.

This is done through the way we raise our animals, the products we create in our on farm commercial kitchen, the food based classes we operate and the products we deliver directly to our consumers.

Martin’s Ridge Farm sell directly to people on their database both in the local area and Sydney CBD and Northern Beaches. People are welcome to join the database via the contact page on our website. Additionally, we have a small shop at the farm where people are welcome to come out and purchase.

South Coast, NSW

Encompassing slow food and paddock to plate experiences, we raise grass fed, ethical meat to create sustainable produce on the South Coast of NSW.

McIvor Farm Foods specializes in Beyond Free Range Berkshire Pork.  On their family farm in Tooborac, Jason and Belinda implement holistic and regenerative farming practices.  Using the pigs to plough and fertilise the land they are able to increase the soil and plant biodiversity.  McIvor Farm balance animal welfare, good environmental farming and produce healthy, nutritious, great-tasting pork.
 
The pigs are beyond free-range, happily spending their entire lives outside in their social groups, with access to shelter, food, and water.  The pigs enjoy a diet of pasture and are supplemented with 100% Australian grains, non-GMO and Antibiotic-free feed.
 
Berkshire Pork is prized for its juiciness, flavor, and tenderness.  It’s commonly marbled and suited to long, slow cooking and is sought after for its crackle.

We are a small Barossa based business that was born out of the Barossa Farmers Market in 2014. 

Using South Australian ingredients and a sourdough culture handed down by fellow bakers, we are passionate about making true sourdough bread and contributing to the region that we love living in!

For almost one hundred years Swallow Rock Reach, on the banks of the Hawkesbury River has been the home of the Stones family, with four generations still living on the property. The farm began in the 1930s and grew award-winning citrus for most of the twentieth century. 

After enduring the devastating floods in the 1960s and 1970s followed by the crash in the citrus markets in the late 1980s, the aging orchard finally gave way to grazing cattle. In 2003, third-generation Sue and husband Matt Simmons started Swallow Rock Organics. BFA Certified vegetables, in particular, potatoes and Kale, were grown for the wholesale markets in Sydney.

Free-range pigs were introduced into the system in 2008 when help was needed to remove leftover potatoes from the paddocks. Pigs very quickly became an integral part of the farming rotation with their potential recognised for cleaning up the paddocks and removing pests and weeds. Now the manure the pigs leave behind helps grow the next crop, completing the cycle in the relationship between animal and plant.

2012 changed the direction of the farm after Matt was awarded a Nuffield Scholarship to travel the globe for 12 weeks and study free-range production systems. Bringing home a bucket full of ideas, the vegetable side of the farm was discontinued and pigs became 100% of the production. Now crops like winter oats, Lucerne, and sorghum are grown as part of the rotation which helps feed cattle.

The marketing has changed considerably as well with half of the pork produced going to Sydney fine restaurants and spit roast catering as suckling pigs and spit pigs and the rest of the pork being sold into likeminded butcher shops that pride themselves on sourcing ethically farmed pasture-raised produce.

The modern commercial white pig is the pig of choice now with just a small amount of heritage bloodlines to produce a sow that does well in the paddock yet still produces a piglet that is well muscled and robust with just the right amount of fat.

The Process
Chris de Bono is the Miso Master at Meru Miso. He has a keen interest in fermentation and was drawn to Miso when he learnt about the complexity of flavours and intricacies involved in crafting Miso.

The Miso making process is steeped in history and demands patience. Once the koji, soybeans (or chickpeas) and salt have been mixed, they are pressed down in a fermenter and remain untouched for the duration of the fermentation. Everything up to this point needs to have been as good as it can be to avoid disappointment when it is opened in three months time.

How to use
Think outside of the Asian repertoire - Miso adds the savoury deliciousness that you get when you cook a mirepoix for hours - add to your mirepoix and taste the difference.
