Les and Lyn Apps are pioneers of the Queensland spanner crab fishery. 

Starting out in the late ’80s as a two-person operation they slowly built their business until by the early 2000s they had the largest spanner crab exporting business in the world. By 2007 Les and Lyn were ready to try new things so they sold up and moved on. They couldn’t stay away for long though and a few years later they were back, this time launching Aussie Red Crab Pty Ltd and the Fraser Isle Spanner Crab brand.

Today Aussie Red Crab is a robust and vertically integrated production, owning and fishing the largest single percentage of the Queensland spanner crab quota, and encompassing several fishing vessels, an unloading wharf, live tank system and processing factory.

Aussie Red Crab maintains their supply of superior quality spanner crabs by ensuring that all aspects of the fishery are promoting excellence. The company philosophy is that everyone involved in the spanner crab fishery supply chain, from deckhand through to processing worker, are fairly rewarded for their work so that only the best quality crab is caught and sold under the Fraser Isle Spanner Crab brand.

Protecting and maintaining the marine environment surrounding the UNESCO World Heritage-listed Fraser Island is a top priority. The fishery was one of the first to be certified sustainable under the 1999 Biodiversity and Environment Protection Act and has since been recognised by environmental groups as having a zero by-catch and zero effect on the seafloor. By integrating sustainable business and environmental practices we are working to ensure that the world can enjoy the distinctive and delicious flavours of Fraser Isle Spanner Crab for many years to come.

THE PRODUCT

Spanner crab is truly delicious. It has a unique flavor – sweet and with a firm flesh – and is so versatile it should be a staple in every kitchen.

Fraser Isle Spanner Crab

Fraser Coast, QLD

Firm, succulent and super sweet, Fraser Isle Spanner Crabs are harvested in the pristine waters of the Sunshine Coast, Queensland.

Ganymede Truffles is an organically run truffle farm located two hours from Sydney and 90 minutes from Canberra in the Southern Tablelands of New South Wales. The soil is rocky/well draining and the climate oscillates between cold and frosty in winter and very hot in summer. Serendipitously all this coalesces to produce near perfect conditions for the Périgord truffle.


Our farm is flanked by the Cookbundoon Ranges to the west and backs onto the Tarlo River National Park. We’re passionate about the habitat and wildlife and have planted native bird corridors throughout. We’re deeply interested in land management, soil health and erosion control.


In 2009 we commenced the soil preparation and in 2010 we planted our first truffière, following with a second in 2012. We now have 900 oaks and hazelnut trees planted on 2.5 hectares.  Our second truffière features a  picturesque sandstone farmhouse ruin, sympathetically restored, which has hosted many a neighbourhood wedding as well as our truffle lunches.

 

We pride ourselves on our approachability, our absolute commitment to truffle grading and on supplying only our best and freshest truffles to cooks and chefs alike. All care is taken to get our freshly harvested truffles to your table as quickly as possible without comprising our commitment to hygiene and careful handling.


As well as our truffles, we offer entertainingly educative truffle hunts to guests with truffle and truffle dog-facts, production and provenance. And thanks to our mostly friendly bees, we also offer truffle infused honey!

A family owned and operated farm producing black perigord truffles with the help of media sensation Zazu the Trufflehound, in the Southern Tablelands of NSW.

Garlicious® Grown of Braidwood produces an award winning range of black garlic products well received in Australia and internationally.  Black garlic is caramelized white garlic, held at low temperature and high humidity for 30 days completing the Maillard reaction to bring forth molasses sweetness, umami flavour and great black colour with a soft texture. Black garlic has twice the antioxidants of raw garlic, making it a tasty health food. Not requiring cooking, black garlic can be a treat on cheese with a glass of red, or sophisticatedly added as a slice on char grilled scallops. Chefs are admiring the powder range: Christine Manfield said “Garlicious Grown black garlic has joined my list of essential pantry items, adding depth of flavour, a delicious umami wow factor and a sweet savouriness to myriad preparations”. Black garlic cloves are sold jarred, either peeled or as single unpeeled cloves ready for easy use with minimal waste. For the last 25 years, holistic practices have been the central focus of our business model. At Grassland Poultry it’s all about the soil, one hundred percent groundcover and resting the environment. Our poultry enterprise is just one piece of the puzzle, that we use to help improve and maintain our beloved landscape. Through our years of experience with cattle, sheep and now poultry we believe that animal welfare and regenerative farming equals great taste.
 
Our award-winning table birds are slow-grown, pasture-raised, ethically produced and PROOF accredited. We use a specific breed, Heritage Sommerlad Chickens which have been developed from old heritage breeds for Australian conditions. They are grown without the use of medications or chemicals and are nutrition dense with a superior taste and texture.  Our birds are free to roam 24 hours a day on pasture, with a free choice of feeds including foraged insects, plants and whole grains. This means we offer a greater nutritional value by stimulating the digestive system, helping to create their distinctive flavour. Having the birds on pasture helps connect with our regenerative approach to the landscape, we are all about minimal interference - the way nature intended.
 
Animal welfare is very important to us, it’s why we bred, grow and process our birds all on the farm. Having our own purpose-built processing facility gives us total control of our product welfare and quality. The quality is determined by the way we process our birds with no chlorine baths and aging every bird by air chilling for at least 24 hours before packaging them. To improve animal welfare, we also breed all our own chicks and raise them for 10-14 weeks. Compared to other farmers who ‘buy-in’ meat chicks and out-source their processing, we are in control of the process from beginning to end.
 
We like to think we are creating the integral link in this industry between animal welfare/ health and regenerative landscapes, whilst also helping the general public to understand where and how their food is grown.

The products were the result of the Grund family needing to satisfy their palates with high quality chilli sauces, relishes and chutneys. Not being able to purchase these products anywhere near their hometown of Kimba, in rural South Australia, they decided to grow their own ingredients on their farm and make their own unique products.

After 25 years of making, tasting and mastering the family recipes, their delicious products are now sought after throughout Australia.
