Our Story

Darling Mills Farm has been operating for over 30 years from humble beginnings on three acres of land on Darling Mills Creek at Castle Hill, to our current  farm situated on 20 acres of intensive production at Berrilee near Berowra Waters.

With a travelling time of approximately 50 minutes to Sydney’s CBD we are able to deliver the freshest produce with a minimum of transport “food miles”. Darling Mills Farm produce has graced the tables of Sydney's finest restaurants for over two decades and our quest to grow premium quality produce continues as we seek new and innovative foods to grow for our local chefs.

Darling Mills Farm and grower Steven Adey were recipients of  the inaugural Sydney Magazine Food Hall of Fame Awards given to producers who have made a significant contribution to the food industry. Steven has also received Gold Medal status in the annual Australia wide Vogue/Delicious Magazine Produce Awards over the past four years.

Farming Philosophy

Darling Mills Farm has been committed to running a sustainable operation since its establishment. The Darling Mills system of production has always employed the  practice of composting  to replenish and enrich the soil as a central part of its farming philosophy.

A mix of  farming methods from biological farming to permaculture and hydroponics helps create a superior product which has minimal impact on the land. Hydroponics is a  system which is an efficient user of water, ensures year round quality of product and provides a buffer against pest problems. Darling Mills Farm sprays are used sparingly and  are organically certified. They includes eco oil which consists of  tea tree oil and other botanicals along with fish and seaweed extracts.

Darling Mills Farm is a polyculture enterprise as opposed to monoculture. A large number of varieties are grown in mixed planting. This acts to minimise large scale pest or disease infestations which tend to occur in single variety plantings. Different varieties have different susceptibilities to pests and disease and by mixing the plantings a simple impediment is provided to mass dispersal.

At Darling Mills Farm we are committed to providing products as food safe as possible and we are HACCP accredited.

Growing high quality products is paramount at Darling Mills Farm and all care in handling from growing to delivery is compliant with current health and hygiene best practice.

Darling Mills Farm is located in Berrilee, an hour north of Sydney, NSW. They produce exceptional quality salad leaves, micro herbs and edible flowers. 

East Trinity Cocoa plantation overlooks the tropical city of Cairns, in Far North Queensland. 

This is where the rainforest merges with the Great Barrier Reef and the mountain water is as clear as the air. It's the dark, rich soil that enables them to grow the best cocoa beans possible. 

Established in 2012, East Trinity Cocoa is the largest cocoa bean producer in Australia. 

As a fully Australian owned business, East Trinity Cocoa is committed to sustainable farming practices. The farms run on solar power which gives result in a 90% carbon free environment. 

They supply roasted cocoa beans, granules, cocoa powder, Cocoa juice and Cocoa trees

The flavour, the versatility, the producers who care for the hens who lay them, and how we make eggs safer for kitchens and bars. We’re passionate about eggs and the small details that make them the powerhouse of just about any cuisine.

Born out of a desire to make kitchens safer without compromising on quality, and frustrated with the lack of free range options for commercial kitchens, Eggzi has been 23 years in the making.

Founder and chef Mark Beattie having worked in Australia and Internationally followed his passion for the best seasonal ingredients, provenance and a love of pasta right back to his roots.

“I was raised in rural Manning Valley, where my appreciation for food’s relationship to people, environment and community began.

“Provenance matters. People want to know where their food came from and how it was raised and produced.

The range includes Free Range Whole Eggs, Free Range Egg Yolks, Bartender Egg Whites & Dessert Egg Whites.

Craft your masterpiece with safer, Australian free range and pasteurised eggs.

Our Saffron was planted, grown, picked, processed and packaged (all by hand), in the pristine environment of the Upper Derwent Valley of Tasmania.

We (Jen and Lee) moved to Ellendale, Tasmania in September 2017 onto a 250-acre farm 75 kms North West from Hobart. Located in the beautiful Upper Derwent Valley region of Tasmania.

Previously from a suburb six kilometres from the centre of Melbourne’s CBD. I (Jen) was one of the executive nursing team in a large tertiary health service, where had I worked for nearly 40 years. Lee was a senior manager for a major Telecommunications company, with the previous couple of decades spent as an officer in the Royal Australian Navy.

After establishing Eladnelle Farm in September 2017, the first harvest of Saffron was in April/May 2018. December 2018 a website and a social media presence was launched to market our Saffron; including the numerous ways Saffron can be used in both savoury and sweet recipes . The many medicinal benefits that Saffron is being found to deliver are highlighted too.

Sale of Eladnelle Saffron commenced in earnest as of January 2019, at Farm Gate Market in Hobart each Sunday. Being averse to using chemicals on our Saffron crop we are working towards organic status for our Saffron.

The saffron spice is the stigma of the flowers (the red filaments or style, that form the female reproductive parts) of the Crocus Sativus. As of our 2019 harvest; we are continuing the practice of only processing the actual Saffron section of the stigmas from the Crocus sativus flowers. What this means is that we only process the red part of the stigma - which is pure Saffron. The yellow/orange that you may find on some Saffron sold is called "floral waste content" it is part of the 'style' of the flower and has no culinary value at all. By using only pure saffron you will need a smaller amount of Eladnelle Saffron to achieve the results from other Saffron you may have previously used before.

We aim to constantly review our practices, so that we can ensure we only provide the best Saffron, as per our results from the laboratory testing of our Saffron in 2019; which was graded as Premium Grade 1 Quality Saffron, which is the highest grade of Saffron possible.

We live on a farm near Dubbo, NSW with our fabulous pigs. They are extraordinarily happy pigs and they are all free range – free to dig, eat grass and act like pigs! We produce pasture raised pork. Our pigs are a heritage breed called Berkshires, which are well known for the marbling in their meat.

We sell our meat from paddock to plate. We believe in connecting people to their food, we believe in regenerative farming and we believe that pigs deserve sunshine, happiness and pats.

Jonas is one of those Kiwis who moved to Australia to study and work and never left. Living with his family in Northern NSW, Jonas brought his love of hunting, the great outdoors, and fixing broken things with him when he moved to Australia. But if only one thing defines him, it’s his passionate dislike of waste. He will go to great lengths to avoid buying new things, and much to his wife’s chagrin, find second, third, and fourth lives in almost everything that passes through his hands – he’s the original tinkerer.

His passion for food waste turned itself into Fair Game when, after discovering he was unable to donate excess meat after a hunting trip, he realized he could do something that would make a difference. He learnt about the convoluted legal process wild game harvesters go through to get meat on plates, and it spurred a passion that led to the formation of Fair Game Wild Venison.

As many small businesses do, Fair Game started as an idea at the kitchen table and quickly grew. As restaurants, deli’s and foodies learned about the quality of the meat, combined with the ethics and environmental benefits of wild venison, the business expanded and now services the Northern Rivers, the Gold Coast, Brisbane, Sydney, Canberra, Melbourne and Perth.

In recognition of the quality, ethos and sustainability of the product, Jonas was recently awarded a Gold Medal at the Delicious. Produce Awards 2020. Receiving this recognition in his first year of trading is surely a sign of things to come.
