Chestnut Brae was originally both a chestnut and daffodil farm, now only the chestnuts are farmed, but the abundant daffodils planted between the rows of chestnut trees means the orchards are stunning in Spring when the daffodils are flowering, ablaze with abundance and colour in Autumn, picturesque in Winter and a cool European forest of trees in Summer.

Located just 40 minutes from the Busselton Margaret River Airport on the Blackwood River Valley Farm Trail, Chestnut Brae is 15 minutes south of Nannup (off Vasse Highway and Chalwell Road) and 55 minutes inland from Margaret River. Chestnut Brae’s rolling hills, pastures, permanent flowing springs and mature chestnut forests give a feeling of being in Europe as you arrive at the farm. Wiltshire sheep are our lawn mowers that roam and forage through the orchards keeping suckers trimmed and the grass down.  Cheeky Guinea Fowl busily fossick keeping insects under control across the farm.  Heritage Wessex Saddleback pigs root and snuffle happily turning our soil over, adding to the soul satisfying peacefulness of Chestnut Brae.

The stunning gardens are part of the Organic Garden Trail, and open for The Festival of Country Gardens, the Nannup Flower and Garden Festival and Bloomin Wild.

Artisan producers of Certified Organic Sweet Chestnuts, a range of chestnut products and chestnut fed pork from pasture raised heritage Wessex Saddleback pigs.

I’m Fiona, a Wiradjuri woman of the Lachlan River. Generations of my family have lived on the banks of the Belubula River, which is part of the Lachlan River catchment on the Central Tablelands in Central West NSW. 

Belubula is a Wiradjuri word meaning “stony river”, referring to Country peppered with basalt rock from eruptions of Mt Canobolas, a nearby extinct volcano. I feel the most grounded when standing on Country, where the trees are members of our mob and the flowers, fruits and leaves are our food and medicine. 

My business is called Chocolate On Purpose and was born on Country at the source of the Belubula River, in Millthorpe on the Central Tablelands. Our signature range of chocolate is called “Bush Food Chocolate”, created by combining melt in the mouth couverture chocolate with Australian Indigenous botanicals growing on Country. 

Our Mission is to produce quality chocolate creations for both lovers of fine chocolate and those wanting to make the world of chocolate a better place for all, by sourcing Australian Indigenous botanicals from Aboriginal Communities around Australia and sustainable cocoa only from Suppliers who are members of the “Cocoa Horizons" Foundation. 

Our Vision is to educate the world about the superfood benefits of our Australian Indigenous botanicals and the wisdom of our First Nations People in their traditional use of these botanicals, so we are respected for this wisdom and honoured for our culture.

Chocolate On Purpose

Chocolate On Purpose is an Indigenous business in Millthorpe NSW combining couverture chocolate with Australian Indigenous botanicals to create our Bush Food Chocolate range.

Chris is the skipper and fisherman on every fishing trip. His line caught fish are killed instantly and humanely using the ike-jime method. Fish are bled well and immediately placed into a salt ice brine to bring their temperature down to 2oC.  Once this is achieved, every fish is gently hand-packed, one by one into custom-made fibreglass eskies.

Only small quantities of fish are caught, and fishing time is short - rarely more than 24 hours fishing before returning to port. On return, the boat is hauled onto a trailer. The catch is driven right to the door of our purpose-built cold room and packing facility.  Fish are unloaded from the boat and immediately packed for transport, with minimal handling and time. 

Chris Bolton Fishing is part of the Great Barrier Reef Marine Park Authority (GBRMPA) reef guardian program.  The reef guardian program recognises the positive environmental work undertaken by communities and industries to protect the Great Barrier Reef.   The program involves working closely with those who use and rely on the Great Barrier Reef for recreation or business, to help build a healthier, more resilient reef system.

Chris Bolton Fishing won the ‘From the Sea’ category in the 2019 Harvey Norman Delicious Awards for wild caught red emperor and was also a gold medallist in the 2020 Harvey Norman Delicious Awards for seasonal catch – 5 spot garfish.  Chris is always looking for new and different ways to get the most out of his product.

The history of the beverage was fascinating and she was curious to see if the concept could be translated into a recipe using Australian native ingredients.
