We specialize in doing a unique product, the big crunchy desert salt flakes and the best gourmet salt and flakes infusions such as smoked salt,  chicken salt, garlic salt, chilly salt and other delicious flavours.

The gourmet salts we do are really amazing due to the abundant natural minerals in our brine which is harvested by hand from ancient seas under the ground. The clay minerals add a distinctive mild taste to the salt.

Our oasis is located in South Doodlakine about 200km east of Perth along the Great Eastern Highway. The ancient Yilgarn river passes through our land and we harvest its underground brine which is full of amazing natural salts, minerals, different clays and hardy salt plants. Its brine is very old and this paleo (ancient) river passes under the ground slowly flowing to the Indian Ocean.


This family owned company is fully Australian owned that produces that best gourmet salt and skin care products for the Australian and International markets.

Paleo River makes the best and biggest crunchy Desert Salt Flakes in the world with a distinctive beautiful mild taste.

Pecora Dairy is an artisan sheep milk dairy and cheesery founded in 2011 by Michael and Cressida Cains. Our farm is 200 acres situated in Robertson, the Green Heart of the Southern Highlands, within 100 miles of Sydney. It's here, where our ewes graze lush pasture and drink from crystal clear running creeks to produce rich, creamy milk for us to make our seasonal ewes milk cheeses. 

Our overarching philosophy is a gentleness on the land, towards our ewes, and in the production our cheese. This light handed approach intertwines throughout all aspects of our farming and cheesemaking, resulting in benchmark, ewe's milk  cheeses with provenance of a single time and place and are expression of our farms entire ecosystem. We've raised our pure East Friesian sheep flock and created our cheese making systems with painstaking care over many years. 

We work together, attending to every aspect of our pursuit. It is our life's work.

Handcrafted ewes milk cheese from the Southern Highlands NSW and the home of Australia's first raw milk cheese.

As a family, we share over seven generations of smallgoods and butchery tradition, skill and knowledge. It’s in our blood. 

It starts with the best quality ingredients. We source meat from some of Australia’s best producers, who rear their animals to be the best in their category. We have a close relationship the farmer or producer of each an every piece of produce that comes into the shop. 

The product curing process and production is natural without the use of starches, additives, phosphates or preservatives. This natural approach relies on bacteria to do their job in converting nitrates to nitrite, improving flavour, increasing acidity and mould growth (white moulds on outer casing).

All of our Salumi is made with Bangalow Sweet Pork from Byron Bay with a base of crushed black pepper and Sicilian Sea Salt.

Our retail butchery, cafe & flagship store is located in Kogarah whilst all our Salumi is produced at our Kingsgrove Salumeria by our Family. 

Like in Italy, everything is available for sampling. We’re talking exceptional handmade produce that’s made the real way as Pino describes it ready for you to enjoy.

Provenir beef is truly unique and is the result of a vision shared by its founders, who include a chef, a farmer, and a vet.
 
It was their collective concern for animal welfare, and a passion to produce the highest quality meat with true provenance that led the founders of Provenir to launch an exciting new category of meat.
 
Their vision has been realised through the development of a mobile on-farm abattoir, enabling Provenir to eliminate stress to animals associated with live animal transport, and process cattle at the point of production, on the farm on which they are raised.
 
By processing on-farm Provenir capture the value, quality, and true provenance of the beef our farmers produce.
 
Provenir is the first and only commercially licensed mobile on-farm abattoir operating in Australia. Partnering with select farmers raising top quality, grass-fed cattle in Southern NSW, Provenir processes a range of breeds, including Hereford, Angus, and Speckled Park.

Animal stress can have a direct negative effect on meat quality – to the founders of Provenir the solution was obvious, eliminate live transport to abattoirs by bringing the abattoir to the farm.

The Provenir process is not only better for animal welfare it is better for meat quality too.
 
Just two months following the launch of Provenir our beef was awarded a Gold Medal and Best in Class at the prestigious 2019 Australian Food Awards in the Branded Beef category. Judged by a panel of industry experts the awards provide validation and confirmation of what the founders always believed to be true; that their unique on-farm process is not only good for animal welfare, it also produces exceptional, premium quality beef - juicy, tender and tasty!
 
More recently Provenir was the winner of the 2020 delicious. Produce Award for Outstanding Innovation, Sustainability, and Community, an award which perfectly reflects Provenir’s vision to diversify the red meat industry with our innovative on-farm processing, to be environmentally conscious, and to support regenerative farming practices. Pāmu Deer Milk is an exclusive, natural and rare ingredient from the South Island of New Zealand. 

Our uncommonly delicious produce is raised with love - you can taste the difference.

We are passionate about the ethical treatment of animals and make sure they live the most natural and happy lives. We operate the farm on organic and regenerative principles, using rotational grazing and rotating stock classes to maximise our pastures and soil health.   

Heritage Wessex Saddleback pigs are free to roam and dig. They enjoy brewers grain, fresh fruit, vegetables, bread and grains. It creates a fantastic diet for our pigs - and helps the environment by reducing landfill. 

Border Leicester X Merino sheep and purebred Scottish Highland cattle are pasture raised. Our chickens, ducks and geese are all raised free range. 

Our produce has won multiple delicious. Produce Awards accolades in the 'From the Paddock' category - Lamb in 2017, and Pork in 2018, 2019. 

We are passionate about working with chefs who use the whole animal and pride ourselves on our hands-on approach to our production, from their first day, to a personal delivery on their last.

We also offer farm stay accommodation and farm tours, educating guests to Redleaf on sustainable production and food provenance.

Redleaf Farm adjoins national park and is also home to a number of rare and endangered native species. We are mindful of our biodiversity and the protection and habitat retention for our native animals as well as our farmed ones.
